Quite often, we have what we like to call “Breakfast for Supper”. It usually consists of gluten free pancakes, bacon, eggs (in the form of fried eggs, scrambled or poached…my favorite is poached!). Sometimes, we splurge and have gluten free breakfast sausages instead of the bacon. If you want, you can transform the gluten free pancake batter into gluten free waffles!
Fluffy Gluten Free Pancakes Batter Recipe
This is such a simple recipe!
2 cups of milk (I find that I get so-so results when I substitute coconut milk…the pancakes don’t brown as well)
2 extra large eggs
1 tablespoon of oil (safflower, olive, coconut…your choice
1/4 teaspoon of iodized salt
4 teaspoons of gluten free baking powder
1 tablespoon of vanilla
2 tablespoons of white sugar or honey (optional)
2 cups of gluten free all purpose mix
I like to put all of the ingredients in a blender, starting with the milk, eggs, oil, vanilla and salt. I blend for 30 seconds and then add the gluten free all purpose mix, sugar and the baking powder. Then I blend until it is well mixed.
If you are using a mixer, put the all purpose mix, salt,sugar and baking powder in a medium sized bowl. Stir well. Make a deep well in the middle of the dry ingredients. Beat the eggs well with a fork (in a small bowl), then pour into the well. Add the milk and vanilla, slowly mixing until well combined. It is important to not beat the batter too much because it will make it tough and flat.
When cooking the gluten free pancake batter, it is important to preheat the frying pan or griddle. The same advice goes for preheating a waffle iron, if you have decided to make gluten free waffles! Use an oil that has a high smoke point and let the pan get hot before adding the batter.
When there are bubbles on the top of the pancake, turn over and cook on the other side. This normally takes about 3 minutes, depending on how well your pan/griddle conducts heat. Flip over and continue cooking until both sides are browned and the pancakes are cooked through. Waffles take about 3 to 4 minutes (again, it depends on how hot your waffle maker gets–remember to preheat!). When the waffles stop steaming, they are done!
Serve the pancakes/waffles with an assortment of fresh fruit, such as berries or applesauce and cinnamon. We like to put butter and maple syrup on ours…yum!
Variations: If you want to add some ground flax or ground hemp seeds (very high in omega 3’s) to the batter, don’t add more than 1/4 cup.
