When you are looking for a decadently delicious gluten free treat, these triple chocolate muffins that Kaelie has brought to us, are the answer! These gluten free muffins are brimming with chocolately goodness, from the deep richness of cocoa to the bright taste of the milk chocolate chips and the dark goodness of the dark semi-sweet chocolate chips!
Kaelie’s Triple Chocolate Gluten Free Muffins

Dry Ingredients
3 1/2 cups of gluten free all purpose mix
4 tsp of sifted gluten free baking powder
1 tsp of sifted baking soda
7 tbsp of gluten free cocoa
1 1/2 cups of sugar
1 cup of milk chocolate chips and half a cup of semi sweet chocolate chips
Wet Ingredients
1 cup of milk or milk substitute
1 cup of sour cream or you can use yogurt, keifer or tofu dream
2/3 cup plus 4 tsp of your choice of vegetable oil, coconut oil, butter, or a combination of any
2 large eggs
2 tsp of vanilla
1/2 tsp of salt
Preheat your oven at 375 degrees Fahrenheit. Line 24 muffin tins with large muffin cups.
Add the dry ingredients to a large mixing bowl; baking powder, baking soda, gluten free flour, salt, cocoa, and white sugar. Whisk all of the dry ingredients until well combined.
In a separate medium sized bowl, combine all of your wet ingredients. Put the milk or milk substitute, sour cream, eggs, vanilla and oil. Make a well in the center of your dry ingredients. Add combined wet ingredients and stir till all ingredients are combined.
Add 1 cup of milk chocolate chips and stir till evenly distributed. Fill muffin tins with the batter until 2/3 full. When full, sprinkle with the half cup of semi sweet chocolate chips. Pop them in the oven and bake for 20 minutes!!!
Remember to test before you take them out of the oven because your oven might bake for longer or shorter. Use a toothpick or cake tester. : D If you need to bake them longer, do so at 5 minute intervals, being sure to check at the end of the five minutes.
When fully cooked, let your triple chocolate gluten free muffins cool on a wire rack. You might have difficulty making everyone wait until they have cooled. Can you imagine what your kitchen will smell like when these are baking? : D
Enjoy these decadent muffin treats that children and adults alike dive in for. My son licks his plate!!!! Moist, rich and not too sweet. This is so much better than a chocolate sour scream doughnut!!! So bake and enjoy!!! You may need to double this recipe and store some in the freezer for quick snacks!! It also makes a great and quick gluten free breakfast, if they last that long!
