I think of planned leftovers as a free meal<\/span><\/span>!<\/p>\n<a href=\"http:\/\/sherievenner.com\/thesehealthyelements\/wp-content\/uploads\/2012\/04\/quick_easy_gluten_free_chicken_soup_opt.jpg\"><img loading=\"lazy\" decoding=\"async\" alt=\"quick_easy_gluten_free_chicken_soup\" class=\"aligncenter size-full wp-image-319\" height=\"300\" src=\"http:\/\/sherievenner.com\/thesehealthyelements\/wp-content\/uploads\/2012\/04\/quick_easy_gluten_free_chicken_soup_opt.jpg\" title=\"quick_easy_gluten_free_chicken_soup\" width=\"400\" srcset=\"https:\/\/sherievenner.com\/thesehealthyelements\/wp-content\/uploads\/2012\/04\/quick_easy_gluten_free_chicken_soup_opt.jpg 400w, https:\/\/sherievenner.com\/thesehealthyelements\/wp-content\/uploads\/2012\/04\/quick_easy_gluten_free_chicken_soup_opt-300x225.jpg 300w\" sizes=\"auto, (max-width: 400px) 100vw, 400px\" \/><\/a>\n<h3><span style=\"font-family:georgia,serif;\"><span style=\"font-size:22px;\"><strong>Chicken, Shrimp and Rice Gluten Free Soup Recipe<\/strong><\/span><\/span><\/h3>\n<p><span style=\"font-size:14px;\"><span style=\"font-family:verdana,geneva,sans-serif;\"><em>by Kaelie Ann Huculak Belanger<\/em><\/span><\/span><\/p>\n<p><span style=\"font-size:14px;\"><span style=\"font-family:verdana,geneva,sans-serif;\">8-9 cups of water (or your own gluten free chicken broth, if you have it)<\/span><\/span><\/p>\n<p><span style=\"font-size:14px;\"><span style=\"font-family:verdana,geneva,sans-serif;\">4 mini purple gem potatoes (can use red or gold also) leave peel on for extra nutrition and cut to desired size<\/span><\/span><\/p>\n<p><span style=\"font-size:14px;\"><span style=\"font-family:verdana,geneva,sans-serif;\">1-2 tbsp of minced red onion<\/span><\/span><\/p>\n<p><span style=\"font-size:14px;\"><span style=\"font-family:verdana,geneva,sans-serif;\">2 carrots peeled and thinly sliced<\/span><\/span><\/p>\n<p><span style=\"font-size:14px;\"><span style=\"font-family:verdana,geneva,sans-serif;\">1 and a half skinless boneless chicken breasts cubed into small pieces about 1\/2 inch in size( can use leftover roasted chicken or turkey also)<\/span><\/span><\/p>\n<p><span style=\"font-size:14px;\"><span style=\"font-family:verdana,geneva,sans-serif;\">4-6 tbsp of gluten free liquid chicken bouillon to taste or 3 gluten free chicken bouillon cubes (if you have used your own chicken broth, omit this)<\/span><\/span><\/p>\n<p><span style=\"font-size:14px;\"><span style=\"font-family:verdana,geneva,sans-serif;\">1\/2 cup cooked rice or rice noodles<\/span><\/span><\/p>\n<p><span style=\"font-size:14px;\"><span style=\"font-family:verdana,geneva,sans-serif;\">1 cup of raw shrimp peeled and deveined<\/span><\/span><\/p>\n<p><span style=\"font-size:14px;\"><span style=\"font-family:verdana,geneva,sans-serif;\">Put the raw chicken pieces in a frying pan and fry on medium high heat until<\/span><\/span><span style=\"font-family: verdana, geneva, sans-serif; font-size: 14px; \">&nbsp;golden brown. If you have your own chicken broth, omit the bouillon.(* Note from Sherie: &nbsp;I keep canning jars of chicken broth in the freezer for using in soups, it works really well. Make a big batch and save some for the future!)<\/span><\/p>\n<p><span style=\"font-size:14px;\"><span style=\"font-family:verdana,geneva,sans-serif;\">Bring to a boil and turn heat back down to medium.<\/span><\/span><span style=\"font-family: verdana, geneva, sans-serif; font-size: 14px; \">&nbsp;Cook until veggies are tender and the meat is thoroughly cooked. This will be approximately 20-30 minutes.
